Oat Bars Recipe

A coffee house staple, oat bars conjure up images of crumbs mixing with coffee rings on a daily newspaper, with the low hum of casual conversation in the background. Not only tasty, hearty, and a quick on-the-go snack if needed, they don’t require baking in the oven, reducing the need to slave over a 400 degree temperatures during sweltering summer mornings. Ingredients
- ½ cup butter
- ½ cup honey
- 2 tsp vanilla
- 1/8 cup warm water
- ½ cup brown sugar
- 2 cups large flake oatmeal
- 1 cup quick rolled oats
- 2 tbl flour
- ¼ tsp salt
- ½ tsp nutmeg
- ½ tsp cinnamon
- 1 pinch cloves
- 1 pinch allspice
Instructions
- Combine the butter, honey, vanilla, warm water and sugar in a large saucepan on the stove. Turn it to medium heat. Stir all the ingredients until they are combined and warmed.
- Mix together the oatmeal, rolled oats, flour, salt, nutmeg, cinnamon, cloves and allspice. Remove the saucepan from the heat and mix in the dry ingredients, stirring until evenly distributed.
- Lightly butter a 9-inch by 12-inch baking dish. With wet fingers, spread out the oat mix, applying more water to fingertips if needed to stop them from sticking. Cut in to 8 squares and allow them to cool completely before removing from the dish.
